evaporation

The conversion of liquids to the vapour state by the expenditure of heat energy. Losses of water due to evaporation at plant surfaces can be serious and many species use various means, such as waxy or thick cuticles, to minimize the problem. However evaporation does play an important role in keeping the leaf cool. Evaporation of water from the stomata gives rise to the *transpiration stream.
