oleic acid

An eighteen-carbon monoun-saturated fatty acid. It is the predominant unsaturated fatty acid in plant cells, except in some specialized organelles such as the chloroplast, where *linolenic acid predominates. Oleic acid is formed from *stearic acid in a desaturation reaction involving molecular oxygen, a reducing agent, and ferredoxin.
