prolamine

Any of a group of simple plant proteins that are soluble in 70-90% alcohol but insoluble in water and absolute alcohol. Prolamines contain a high proportion of proline and glutamic acid but only small amounts of basic amino acids. Examples are gliadin, hordein, and zein, found as storage proteins in wheat, barley, and maize respectively. Compare glutelin.
