restriction enzyme

(restriction endonuclease) An enzyme that recognizes and binds to specific short sequences of double-stranded DNA and cuts the DNA at or near this point. Such enzymes are produced by certain bacteria in response to invasion by bacteriophage - they destroy the virus by cutting up its DNA. Restriction enzymes are a useful tool in genetic engineering work.
